A rich light-medium roast with layered notes of date, red delicious apple, and molasses, complemented by subtle grapefruit acidity. The heritage varietals create exceptional sweetness and complexity that showcases the distinctive character of Chiapas terroir.

Altitude and Processing

1,300-1,750 MASL (meters above sea level) Washed processing method from La Concordia delivers exceptional clarity and structure. The careful fermentation and washing removes the fruit mucilage completely, allowing the inherent sweetness and complexity of the high-altitude beans to shine through, resulting in the clean, bright cup profile with layered fruit and molasses characteristics.

Chiapas has a strong culture of organic production and cooperative farming, while also incorporating innovative processing methods and sustainable practices. The combination of these two heritage varieties creates a well-balanced cup that showcases both the traditional coffee-growing expertise of Chiapas and the unique characteristics that high-altitude cultivation brings to these classic cultivars. Bourbon's natural sweetness pairs beautifully with Typica's clean finish, resulting in a coffee that highlights the best of both varieties while maintaining the distinctive profile that makes Chiapas coffees so sought after by specialty roasters.

Serving Suggestions

For a full bodied cup, use one tablespoon ground coffee per cup. Brew with boiling water. Prepare in your dripper, french press, percolator, aeropress or coffee maker. Steep 3 to 5 minutes. Sip, Enjoy, Repeat!
